Easy Vegan Spinach And Cashew Nut Pesto Pasta – Vegetarian Recipe Quick Meals

I created this amazing vegan spinach and cashew nut pesto pasta today. And yes, I know you are thinking, pesto does not have cashew nuts?? It has pine nuts! But I love substituting ingredients just to see what the outcome is like and honestly, this vegan spinach cashew nut pesto pasta tasted so good, you won’t even miss the original pesto pasta.

It has no cheese in it. But for some reason, the cashew nuts provide such a lovely nutty flavour and combined with the spinach and garlic, there’s absolutely no need for cheese. As long as you get the salt right, this entire combination just works.

What’s better? This entire dish took me only 10 minutes to make! It’s one of those perfect quick healthy meals to prepare.

So without further ado, here’s the recipe!

INGREDIENTS:

2 handfuls of pasta

50g spinach leaves

1/2 garlic clove or one small garlic clove chopped

1/2 teaspoon butter or olive oil

8 cashew nuts blended

1/2 large green chilli or 1 small green chilli chopped

Mixed herbs, salt and black pepper to taste

 

Method:

 

First, cook the pasta. In a pan, add your pasta, water and salt. Let it cook until al dente.

 

While the pasta is cooking, it’s time to make the pesto sauce.

Blend the cashew nuts & garlic with water.

In another pan, melt butter & add chillies once hot. Add your blended cashew nut and garlic mix.

Add salt, mixed herbs and black pepper to taste and stir. Let it cook.

Now, blend the spinach leaves. Note, I don’t add any more oil. I know pesto has quite a bit of olive oil in it. It’s up to you. You can add oil if you wish but it tastes just fine without it.

Add the blended spinach puree into the pan. Mix and cook for only 1-2 minutes. You want the freshness and green colour of the spinach preserved so don’t overcook it.

Switch off the flame and hopefully, the pasta should be ready too. Mix the pasta into the spinach cashew nut pesto mix.

Plate and enjoy!

And that’s it. All ready within 10 minutes depending on your pasta.
