I love mixing up the recipes I make, whether I’m cooking them or baking them. Wondering how to use your moringa powder? Well, here you go. In this recipe, I will show you how to bake moringa focaccia bread that tastes delicious whether eaten with soup or as a side to a pasta dish.

Baking bread is not as hard as it sounds. Believe me, I used to think I would never be able to bake bread in this lifetime. However, the one good thing that came out of the pandemic was that I learnt how to bake bread! 😀
The ingredients required in baking bread are very simple, plain flour (or strong bread flour – I just use plain flour because I can’t keep multiple types of plain flour, I’m not a professional baker), olive oil, yeast, salt and water. That’s it. You just need to get the proportions right of the flour, yeast and water and you’ll have bread.
The other key element in baking bread is kneading the dough and proving it. Do not be afraid of the kneading. I used to think I could not bake bread because I wouldn’t be able to do enough kneading, but actually it is very easy and even meditative if I may say so. I get lost in the kneading process of the bread giving me a break from this thing we call life.
Proving the moringa bread can be time consuming but it depends on how you look at it. I needed to prove this moringa focaccia bread for 45 minutes but I got other work done within the 45 minutes that the bread was proving. So really, I did not waste time. Infact baking this bread gave me the much needed frequent breaks inbetween my work (which I forget to take sometimes).
This bread is vegan as it does not use any milk or butter. I used water and olive oil. These are sufficient.
INGREDIENTS:
For dough
2 cups plain flour (250g)
5g easy bake yeast (3/4 tbsp)
1/4 tsp salt
1/2 tsp moringa powder
3/4 cup warm water (163g)
1 tsp olive oil

For Garnishing
Cherry tomatoes
Baby Spinach leaves
Broccoli
Olive oil
Garlic
Mixed Herbs
Salt / Pepper
METHOD:
In a bowl, add the plain flour, yeast, salt, moringa powder and olive oil. Mix with a spoon.
Add the water to this bowl and keep mixing with the spoon until you are no longer able to mix it.
Using your hands, knead the dough for about 10 minutes. I normally place it on my work surface and knead it in various directions.
Roll the dough into a ball, place in your bowl and prove it for 45 minutes.
(Go do your work or something fun!)
After 45 minutes, the dough will have risen to twice its size. Knead it back into a ball.
On a tray, add semolina so that the dough does not stick to the tray.
Using your hands, stretch out the dough into a flat layer.
Place your moringa focaccia dough onto the tray and align it well.
Drizzle olive oil across your moringa focaccia bread and spread it out well across the top of the bread.
Using your fingers, poke into the dough making little holes digging all the way to the bottom. (This is my favourite part!)
You can use any garnishing that you would like and that’s what makes focaccia bread so much fun. Use your imagination!
For this moringa focaccia bread, I used cherry tomatoes, spinach, broccoli, garlic, mixed herbs and olive oil.
Arrange the spinach, cherry tomatoes and broccoli on the focaccia bread.
Grate garlic over it and sprinkle the mixed herbs and seasoning.
You then need to leave this to prove again for 45 minutes.

After 45 minutes, your moringa focaccia bread will have risen again and now it is time to pop it into the oven.
Bake the moringa focaccia bread for 20 to 25 minutes at 200 degrees Celsius (or 390 degrees Fahrenheit).
Enjoy warm with your soup or pasta!
