Ginger Recipes – Beetroot, Pineapple, Blueberry and Ginger Antioxidant Boost Summer Pink Smoothie Recipe
Here we go! Another health boosting pink smoothie recipe packed with antioxidants to prevent premature aging and reduce inflammation – presenting my ginger infused beetroot, pineapple and blueberry smoothie recipe!
I try to get more beetroot in my diet. I love that it is high in iron, Vitamin A and C but struggle to eat it. I don’t really like its taste and makes me a bit nauseous after eating it raw on its own. What better way to add beetroot to our diets than by combining it with other nutrient rich fruits??
I love pineapple, it’s so tropical, reminds me of home and is perfect for the summer. Pineapples are loaded with Vitamin C, Manganese, Vitamin B6 and copper which have antioxidant properties and support a healthy immune system. They also contain bromelain which aids digestion.
Blueberries are known to have strong antioxidant properties and fight free radicals which can cause premature aging. Adding these to the smoothie are a no-brainer.
Finally, I added ginger powder which has gingerol that also has strong antioxidant and anti-inflammatory properties.

INGREDIENTS:
1 small beetroot peeled
Handful of blueberries
1 cup of frozen pineapple pieces
1/4 tsp ginger powder
2 tbsp Greek yoghurt (or vegan yoghurt)
1/2 cup milk (you can use plant-based milk)
1 tsp honey
For Garnishing:
Blueberries
Fresh Pineapple
Granola

METHOD:
Add all the ingredients above to a strong blender and blend.
Pour your pink antioxidant rich ginger smoothie into your glass and garnish with blueberries, pineapple and granola. I love adding granola to smoothies as it adds that yummy bit of crunch when enjoying the smoothie.

This pink beetroot, pineapple, blueberry, ginger powder infused smoothie is super easy and quick to make for a healthy snack or even breakfast! Feel free to add chia seeds, flax seeds or sunflower seeds to this pink smoothie too!
You just have to ensure that you freeze the pineapple or blueberries in the freezer to make this smoothie cold.
