Pink Smoothie – Beetroot, Banana and Kiwi Fruit Smoothie Bowl – Healthy Easy and Quick Breakfast Recipes
Luckily, the weather here in London has cooled down a bit but it is still too hot to be having hot breakfasts.
Today, I was craving a cold smoothie and I also have beetroots that need to be used. Hence, I decided to make this pink smoothie bowl with beetroot, banana, kiwi fruit, oats and yoghurt.
I don’t really like beetroot but I have to add it to my diet as it has lots of iron along with folate and other minerals. One way to actually make this edible is via these smoothies. They taste so yummy.
I also added rolled oats for fibre and garnished with pumpkin seeds and sunflower seeds.
Other fruits I used for garnishing were blueberries and grapes which have antioxidant properties.
I used yoghurt in this pink smoothie bowl and milk as well. You can make it vegan by using vegan yoghurt and plant based milk such as almond milk or oat milk. For sweetener, you can use maple syrup instead of honey.
Makes 1 portion
INGREDIENTS:
1 medium size beetroot
1 kiwi fruit
1 frozen banana
2 tbsp Greek yoghurt
1/4 cup milk ( or plant-based milk)
1/4 cup rolled oats
1 tsp honey or maple syrup
METHOD:
Add all the ingredients into a strong blender and blend.
Pour into your bowl and garnish with blueberries, grapes, sunflower seeds and pumpkin seeds.
Enjoy your pink smoothie bowl cold.
