Overnight oats are the best during summer. I prepared this overnight oats recipe for tomorrow’s breakfast. I used ginger powder in this overnight oats breakfast recipe to create an apple, banana, cinnamon, ginger powder and chia seeds breakfast.

 

I added ginger powder which has gingerol that also has strong antioxidant and anti-inflammatory properties.

It is super easy to make, barely takes a few minutes to put together and you just need to leave them overnight in the fridge.

I used the combination of ginger powder and cinnamon in this easy breakfast recipe as I wanted to use apple and banana as the fruits. These two spices go so well with both apple and banana.

This breakfast recipe is high protein as it has oats, greek yoghurt and milk. It is very filling and will keep you going for a while.

If you would like to make this overnight oats recipe vegan, simply replace the greek yoghurt with vegan yoghurt (you can skip the yoghurt altogether) and replace the milk with plant based milk such as almond milk.

I also used blackstrap molasses as these are very rich in iron.

INGREDIENTS:

 

1/3 cup rolled oats

1/2 banana chunks

1/4 apple diced

1 tsp chia seeds

1/2 tsp ginger powder

1/2 tsp cinnamon powder

1 tbsp blackstrap molasses

2 tbsp Greek yoghurt

1/4 cup milk

For Garnishing:

 

Apple

Blueberries

 

METHOD:

 

Chop the banana and apple.

Simply mix all the above ingredients together and stir.

Keep in your fridge overnight.

 

The next morning, give these overnight oats another stir and top with apple, blueberries and any other nuts or seeds you may desire.

You can also make these and take them to work or eat them on your way to work. They are a very convenient breakfast to carry along. Heck, if you don’t get time to eat them at breakfast, you can also have them at lunch!
