Ground Ginger Powder Recipes – Beetroot and Banana Ginger Infused Oatmeal Breakfast Oats – Vegan Breakfast Recipes
I fancied a hot breakfast today after days of eating cold breakfasts during the hot summer days. Needless to say, I turned to my “never let me down” breakfast oats. Today, I created a new oats flavour using beetroot. Yes, I used beetroot.
I made this beetroot and banana breakfast oatmeal bowl infused with ground ginger powder for that warming, immunity boosting, breakfast. In the UK, it’s always a good idea to alternate between cold and warm meals as the weather tends to change instantly and it’s best to be at a high immunity level.
Infusing the breakfast oatmeal with ginger gives it an antioxidant boost as ground ginger powder contains gingerol which has strong antioxidant and anti-inflammatory properties. This can fight off infections and also help delay aging.

This beetroot and ginger breakfast bowl is vegan as I did not use any milk. I used water to cook the oats, you can also use plant-based milk to cook them. I used honey as the sweetener but you can use maple syrup.
For the fruits, I opted for green grapes, blueberries and melon. I think I almost have the rainbow in my breakfast bowl 🙂
INGREDIENTS:
50g rolled oats
Water as required
1/2 beetroot grated
1/2 ripe banana
For Garnishing:
Green grapes
Blueberries
Melon
Honey / Maple syrup

METHOD:
In a pan on a medium flame, add your oats, water, beetroot, banana and ginger powder.
Cook for about 2 – 5 minutes until the oats are cooked and you have the desired consistency for the oats.
Pour into your bowl and garnish with grapes, blueberries, melon and honey.

This ground ginger powder infused oats breakfast recipe was really wholesome, filling and it is a great way to add your vegetables such as beetroot to one of your meals. Beetroot is normally used in roasts or one pot cooking, but there’s no reason why you can’t add it to your breakfast too!
This oatmeal beetroot porridge tasted delicious! You can taste the beetroot but it is not too strong as the ripe banana taste and ginger warmth comes through as well. The rest of the fruits balance the taste of this breakfast porridge well.
