Soft Eggless Aniseed Spiced Banana Pancakes with Salted Caramel Sauce – The perfect pancake recipe for Pancake Day
My favourite favourite all time spice is aniseed. I absolutely love adding it to curries and even my oatmeal / porridge! It has such a wonderful sweet fragrant taste that just goes so well with fruits.
Today, for pancake day, I wanted to share with you my recipe for my favourite banana pancakes, this time with an added twist! Yes, you guessed it! I added aniseed spice to these pancakes, and my friend, they were bellissimo.
If you want to impress someone this pancake day, try these aniseed banana pancakes! And what better way to top it off than with homemade salted caramel sauce? It was the perfect combo!
I used dairy milk for these pancakes but you are more than welcome to use any plant based milk to make them vegan. I did not use butter or eggs. Instead of butter, I used coconut oil.
These pancakes turned out very soft without the addition of eggs because of the banana. The banana has to be very ripe – so this recipe is perfect for those bananas that are too ripe to eat – yes, don’t throw them away!! Make pancakes 🙂
INGREDIENTS:
Pancake Mix
Dry Ingredients:
1 cup plain flour
1 tbsp baking powder
1/2 tsp aniseed
1/4 tsp salt
Wet Ingredients:
1 very ripe banana mashed
3/4 cup milk
1.5 – 2 tbsp coconut oil
1 tsp honey / maple syrup
Homemade Salted Caramel Sauce
1 tsp butter
3 tbsp milk
3 tbsp brown demerera sugar
1/4 tsp vanilla extract
For Garnishing:
Banana
Blueberres
Walnuts
Salted Caramel sauce
METHOD:
Mix the dry ingredients in a bowl.
Mix the wet ingredients in another bowl.
Add the wet ingredient mixture slowly to the dry mixture and mix to avoid any lumps.
Let the mixture rest for 10 minutes.
Heat a skillet on a low-medium flame.
The skillet is hot enough when you add a bit of water and the water bubbles dance on the skillet.
Use a ladle to scoop the pancake mix and pour it slowly onto the skillet.
Let the pancake cook on a low flame until you see bubbles forming on top.
I usually wait for the top of the pancake to change colour and look as though it has slightly solidified before flipping it over.
Use a spatula and flip the pancake over.
Cook the other side for about 2 – 4 minutes.
Stack the pancakes once they are all cooked.
To Garnish:
For the garnishing, I added banana coins, blueberries, walnuts and homemade salted caramel sauce.
To make the home made salted caramel sauce:
Melt butter in a pan. Add milk and sugar. Mix and melt together on a low flame.
Add vanilla essence and a pinch of salt. Mix until the sauce has a caramel like texture and changes to a brown colour.
Drizzle this over the pancakes stack. This is a game changer.

These banana aniseed spiced pancakes were so yummy, they have got to be my favourite pancake recipe to date.
Soft, fluffy, not too sweet, and the combination of banana, aniseed and salted caramel was just something else.
These banana pancakes have no eggs and they can be made vegan by switching the dairy milk for oat milk or any other plant based milk.
You can also try making these pancakes with oat flour to make them even healthier.
