Ginger Beetroot Porridge with Moringa Quinoa and Fruits / Sunflower Seeds / Pumpkin Seeds – Healthy Rainbow Breakfast Recipes with Blue Butterfly Pea Flower Tea
Lately, I’ve been feeling under the weather. It seems to finally be getting warmer here in London, but for some reason I’ve been coming down with chills and feeling very tired. I can’t help but think I’m coming down with something.
I really felt like eating a healthy breakfast bowl today loaded with lots of Vitamin C and all the goodness I can get. The last thing I need is to fall ill.
Today, I made beetroot ginger porridge with moringa quinoa loaded with banana, kiwi fruit, oranges, blueberries, grapes, sunflower seeds and pumpkin seeds. I had a blue pea flower tea on the side for that extra comfort.
Ginger is really good for boosting immunity, I find it really helps me ward off colds. All the Vitamin C from the fruits is great for immunity too. I have been feeling quite tired and the Moringa Powder in the quinoa has iron which can help reduce fatigue. Beetroot is also rich in iron that can help reduce tiredness.

Sunflower seeds and pumpkin seeds are rich in essential fatty acids and the blue butterfly pea flower tea is rich in anthocyanins which can prevent pre-mature aging.

All in all, this rainbow colourful breakfast was a brilliant start to the day.
Makes 1 portion
INGREDIENTS:
Porridge:
1/2 a small beetroot
50g rolled oats
Water or milk to cook as required (you can use plant-based milk)
Quinoa:
50g tri-coloured quinoa
Water to cook
Garnishing:
1/2 a banana
1/2 a kiwi fruit
Handful of red grapes
Handful of blueberries
1/2 an orange
1 tsp of mixed sunflower and pumpkin seeds
Honey / maple syrup to drizzle
Tea:
1 tsp of blue butterfly pea flowers
Water
Honey / other sweetener as required
METHOD:
Quinoa:
I first prepared the quinoa as this takes the longest to cook. While it is cooking you can prepare the other items.
I placed 50g of quinoa in a strainer and washed it out. I read somewhere that quinoa is laced with chemicals to keep it fresh and it should be washed before cooking.
On a low flame, I then roasted the quinoa until it started popping and making crackling sounds.
At this point, I added water. I added about 3 times the amount of water compared to the amount of quinoa.
I also added 1 tsp of moringa powder.

The quinoa will need to cook for atleast 15 minutes so keep checking it and stirring it to make sure it does not stick to the pan. Roasting the quinoa reduces the cooking time but also prevents the quinoa from clumping.
Use a fork to mix the quinoa, keep it fluffy and prevent it from clumping. Once, it is ready keep it aside.
Porridge:
Porridge / oatmeal only takes a few minutes to cook so I started cooking it when the quinoa was almost ready.
I first grated the beetroot.
In a pan, I added the grated beetroot, 1/2 a tsp of ginger powder and 50g of oats.

I added water and cooked the oatmeal on a low – medium flame until it had thickened to a nice consistency.
While the quinoa and porridge were cooking, I cut up the fruits and kept the blue butterfly pea flowers in the kettle ready to make the tea.
Garnishing:
I added the cooked quinoa and oatmeal to a bowl and garnished with banana, kiwi fruit, red grapes, blueberries and orange.
I sprinkled some sunflower and pumpkin seeds and drizzled honey on this beautiful rainbow breakfast bowl.

Tea:
In a teapot, I added the blue butterfly pea flowers and hot water.
I let it brew for about 3 – 5 minutes.
I poured the blue pea flower tea into a teacup and added honey.

This was such a beautiful coloured oatmeal and quinoa breakfast bowl that cheered me up instantly and kept me going for a while.
If you eat such a wholesome breakfast, there is no way you can fall ill. I sure hope this helps me feel better.
Adding lots of colours to your meals ensures that you are getting lots of different vitamins, minerals, polyphenols. The more colourful your meal, the better.
It is about finding ways to make your breakfast colourful but to also ensure it tastes good.
Adding herbal teas such as the blue pea flower tea also improves your diet. Not only are you getting the anti-aging benefits of the anthocyanins found in blue pea flower tea, you are also eliminating caffeinated tea / coffee from your diet. There is nothing wrong with consuming some caffeine but it should be done in moderation.
