Golden Oatmeal Apple Spiced Breakfast Bowl with turmeric ashwagandha and spices – Autumn Breakfast Recipes

For autumn, it is still pretty warm. The leaves are still green. I was hoping to find some coloured leaves to present my breakfast bowl with, but alas! the leaves are still on the trees 🙂

After 3 months of non stop work, I finally had a moment today to prepare a lovely oatmeal breakfast at a leisurely pace.

I opted for an apple spiced figgy porridge bowl because I am trying to make it feel like it is autumn as I’m seeing Halloween decorations everywhere I go. Doesn’t feel right, so need to re-create the season.

I’m also feeling under the weather and may be coming on with a cold so I added my turmeric ashwagandha spiced golden latte mix to flavour this bowl. This latte mix along with the bananas and spiced apples was just such a wonderful combination.

Turmeric is thought to boost immunity and ashwagandha is an adaptogen that can be calming as it reduces stress and anxiety. The various spices are rich in antioxidants which can boost immunity further.

This breakfast bowl is vegan as I used water instead of milk. You can opt for plant based milk or dairy milk.

For the sweetener, you can use maple syrup or honey depending on your meal preferences.

INGREDIENTS:

 

For Porridge:

50g rolled oats

Water as required (or plant-based milk e.g. oat milk / almond milk / dairy milk if you are not vegan)

1/2 diced apple

1 tsp ashwagandha turmeric golden latte mix

 

For spiced apples:

1/2 apples sliced

1 tsp cinnamon powder

1 tsp coconut oil

 

For Garnishing:

Banana

Fig

Sunflower seeds & Pumpkin seeds

Honey / Maple syrup

METHOD:

To make the spiced apples, add coconut oil to a skillet.

Lay out the apple slices.

Sprinkle cinnamon powder.

Cook them for about 2 – 3 minutes. They should be slightly cooked, not too mushy.

 

To make the porridge;

In a pan on a medium flame, add your oats and water/milk.

Add the diced apples and turmeric ashwagandha golden latte mix.

Cook for about 2 – 5 minutes until the oats are cooked and you have the desired consistency for the oats.

Pour into your bowl and garnish with the cooked spiced apples, banana, fig, sunflower and pumpkin seeds and sweetener.
