Turmeric Recipes – Super Moist Easy Bake Eggless Banana Turmeric Loaf Cake Recipe – Eggless Dessert Recipes

 

Presenting a little something for the sweet tooth – my eggless turmeric infused banana cake recipe. Yes, I know, I can never get enough of turmeric.

Turmeric is a wonderful superfood that I endeavour to add to cooking or baking and what better way to use turmeric than to add its beautiful golden yellow colour to banana cake? We want a day full of yellow and sunshine.

This turmeric banana cake is eggless and uses oil instead of butter. I also added yoghurt but you can make it vegan by simply using vegan yoghurt.

The key to making banana cake is to use bananas that are very ripe. When bananas are very ripe, they are kind of breaking down into sugars and hence this makes the banana cake sweet – meaning that you can use less sugar when making the cake. Ripe bananas are also more flavourful making the banana bread taste delicious.

When I have ripe bananas, I never throw them. They are perfect for baking. Also, you can cut them into coins and freeze them to later be used in smoothies.

 

I added cinnamon and nutmeg to this turmeric banana eggless cake because spices add another level of flavour to this cake. Both cinnamon and nutmeg go so well with banana that I could not skip them.

INGREDIENTS:

 

Dry Ingredients:

 

1 and 1/2 cups plain flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 tsp turmeric powder

1 tsp cinnamon powder

1/2 tsp nutmeg

Wet Ingredients:

 

1/2 cup olive oil (or sunflower oil)

3/4 cup mashed bananas (was about 1.5 large ripe bananas)

1 tsp vanilla extract

slightly less than 3/4 cup yoghurt (vegan yoghurt)

1/2 cup granulated brown sugar

 

For Garnishing:

 

1/2 split banana

Pumpkin and sunflower seeds

Walnuts

METHOD:

 

In a bowl, mix all the dry ingredients (plain flour, baking soda, baking powder, turmeric powder, cinnamon powder, nutmeg) and keep aside.

In another bowl, add all the wet ingredients (olive oil, mashed bananas, vanilla extract, yoghurt) and sugar. Mix until everything is combined.

Add the dry ingredients to the wet ingredients and mix gently. Do not overmix.

 

Preheat your oven at 180 degrees Celsius for 10 minutes.

 

Butter or oil your loaf tin. Alternatively, use parchment paper to prevent the cake from sticking to the tin.

Add the turmeric and banana cake mix to the loaf tin.

Garnish with the 1/2 split banana, sunflower and pumpkin seeds and walnuts.

 

Place in your oven and bake for 45 minutes at 180 degrees Celsius. Your oven may cook differently, so do adjust this time if required.

Use a fork or toothpick to check if the cake is ready. Simply insert your toothpick or fork into the cake and pull it out. If the cake mix does not stick to the fork or toothpick, your cake is ready.

 

Remove from oven and leave to cool.

You can add frosting if you prefer but this time I kept it simple as I just wanted to have a simple turmeric banana loaf cake at tea time.

The reason I am sort of ok with eating this eggless turmeric banana loaf cake is that it has the goodness of turmeric powder and some nuts and spices too. If I am going to indulge, I would like it to be a bit healthy – just makes me feel less guilty 😀

If you are vegetarian, you can substitute the oil for butter instead.
