Ultra Soft Eggless Cardamom Infused Banana Oat Pancakes – Oat Recipes – Quick and Easy Breakfast Recipes
Guys, today I want to share a really really delicious pancakes recipe with you – my cardamom infused banana oat pancakes. These oat pancakes are super soft, they taste so yummy and just melt in the mouth. They are perfect for those with gluten allergies (use gluten free oats) and if you’re vegan, you can also replace the milk with plant-based milk such as coconut milk or almond milk or oat milk.
I used a very ripe banana for these pancakes and that’s exactly what you need. Whenever you have ripe bananas, do not throw them away. They are perfect for cakes or pancakes.
I added cardamom powder to these pancakes for that delicious flavour. Cardamom goes so well with banana and I was in heaven while having these cardamom infused banana oat pancakes.

They are very quick and easy to make. These pancakes are eggless and do not use butter either.
Makes 4 – 5 cardamom infused banana oat pancakes
INGREDIENTS:
Dry ingredients
1 cup rolled oats
1 tsp baking powder
1/4 tsp cardamom powder

Wet ingredients:
1/2 cup mashed banana
3/4 cup milk (or plantbased milk)
1 tsp honey or maple syrup
1.5 tbsp coconut oil (you can use butter about 1 tbsp if you’re not vegan)
For Garnishing:
Banana coins
Blueberries
Walnuts
Blackberries
Honey or maple syrup
METHOD:
First prepare the dry mix.
You need to blend the rolled oats until you have made oat flour. Blend for about 1 minute.
In a bowl, add the oat flour, baking powder and cardamom.
Next, you need to prepare the wet mix.
Add the mashed banana, milk, honey and coconut oil to a blender and blend until smooth (like a smoothie).
Gently pour the wet mix into the dry mix while mixing to avoid any lumps.
Mix until all the lumps are gone.
Leave your banana pancake mix aside to rest for 10 minutes.
Meanwhile, prepare your toppings.
Heat a non-stick pan on a medium flame until hot.
Lower the flame to a low heat.
I used a ladle to ensure my pancakes were all the same size and I got 4 cardamom banana oat pancakes.
Using a ladle, gently pour the banana oat pancake mix onto the skillet.
Let it cook for about 3 – 5 minutes and you’ll begin to see bubbles forming on top.
The top of the pancake will also start hardening.
The bubbles normally start forming along the edge working their way to the centre. Once the bubbles have reached the centre and the top looks a bit cooked, you need to flip the pancake.
Use a spatula and slowly slide it underneath the pancake. Check that the pancake is browned and flip.
Cook the other side for another 2 minutes and your pancake is ready.
Follow this procedure until all your pancakes are cooked.
Stack them on each other.
Drizzle your honey or maple syrup over the cardamom pancakes.
Garnish with nuts, berries or whichever toppings you’d like.
