Mango Lassi Chia Pudding – Summer Healthy Dessert Recipes
It’s summertime! Well, atleast it’s warm and when I see mangoes in the supermarket, I can only think of one thing! Mango Chia Pudding or Mango Lassi!
I thought I would create a twist this time by making a fusion – that’s right – mango lassi chia pudding. Why waste time making two different things when you could just combine it into one healthy dessert recipe?
All I did was basically make mango lassi puree and combined this with your classic chia pudding and then garnished with pistachios, rose petals and saffron.
This summer mango chia pudding recipe is vegetarian. To make it vegan, use plant-based milk or coconut milk instead of dairy milk and you can either skin the yoghurt or add vegan yoghurt. It will simply be less creamy but yummy nonetheless! Also, use maple syrup or another sweetener instead of honey.
Makes 1 portion
INGREDIENTS:
For Chia Pudding
Milk or Plant Based Milk (You can also use water if you want to make it vegan or less creamy)
1 tsp sweetener (I used honey)
For Mango Lassi Puree
1 ripe mango
1 tbsp yoghurt (or vegan yoghurt)
2 tbsp milk (or plant based milk)
1/4 tsp cinnamon powder
Pinch of saffron
Sweetener if your mango is not very sweet (mine was not that sweet so I added 1 tsp of honey and then another tsp after blending as it was quite bitter)
For Garnishing
Chopped Pistachios
Saffron

METHOD:
Chia Pudding
I prepared the chia pudding the night before and kept it in the fridge overnight.
Simply mix the chia seeds, milk and sweetener and leave in fridge overnight.
In the morning, mix them well.
Mango Lassi Puree
Add all the ingredients and blend together.
Prepare your Mango Lassi Chia Pudding
This is the fun part and you can get the kids to join in too!
Simply layer your mango lassi chia pudding by alternating between the chia pudding and the mango puree.
Garnish with chopped pistachios, saffron and rose petals.

MANGO LASSI CHIA PUDDING
This chia pudding is so perfect for summer time and will add a wonderful twist to your standard mango chia pudding.
You can prepare it beforehand and store it in the fridge for 1 – 2 days incase you are having a party.
This mango lassi chia pudding makes for a healthier summer dessert recipe full of seeds and tropical fruit goodness.
You can also add browned coconut when garnishing!
