    Gran would keep a jar with freshly ground spices in her pantry which she would proudly use in her chai. Things were simpler back then, none of that old, filled with preservatives and artificial flavourings food. Everything was freshly prepared at home. This recipe of ground spices was passed down to my mum who then passed it to me and now I’m sharing it with you.

    Proper masala chai must be brewed in a pan.

    This tea masala is freshly ground with no preservatives or additives and is perfect to give your tea that kick. You can either use Assam tea leaves for a stronger Bombay masala chai or Kenyan tea leaves for a semi-strong chai. I like both depending on my mood.

    Proper masala chai must be brewed in a pan. For 1 large portion of masala chai, add 1 tbsp of Assam loose leaf tea or Kenyan tea to your pan. Add between 1/2 tsp – 1 tsp of Grandma’s tea masala depending on how spicy you want it.

    If you are using Assam tea leaves, add 1 tbsp of sugar (assam is bitter). If you are using Kenyan tea leaves, you can use less sugar. Add water and brew this tea on a high flame for about 10 minutes. Add milk as required and brew for another 10 minutes. Strain into your tea cup and enjoy.
